Let me start by saying that I'm not an expert. My degree is in Global Business with an emphasis in International Studies and Finance. As far as Alpha-Gal goes my knowledge comes from individual study and input from my favorite Alpha-Gal friend and test subject. I do not have an education in Nutrition or any Food Sciences.
I do a lot of cooking for my Alpha-Gal friend, let's call him MN. His family and mine used to live 15 minutes away from each other. Then, both families moved across the country. We now live 5 hours from each other. As a result, we visit each other for long weekends 4 times a year.
MN feels like he can't go out to restaurants except for very special vegan restaurants. He's been hurt too many times due to his allergy. So, the two times a year MN's family comes my way, I make as many different foods as I can for him. I think this foodie deserves a little variety.

This time, I tried my own recipe and updated it to make it Alpha-Gal safe. MN had tried my candied pecans in the past, before we knew that he had this strange allergy. He loved them. I knew that they would be something special I could prepare for him that wouldn’t be hard to alter.
This Thanksgiving, it was my husband and my turn to go to MN's for the long weekend. He was cooking with the help of my husband, and I brought our favorite chocolate pie for dessert. Because of the pecans, I also had a special dessert for MN.
